Thanks for the suggestions if I were to make them. I normally bake my bar crusts uncovered and they seem to be okay. I have yet to make bars in my new apartment so I'll see about that. They look great though!

Bummer about the brownies. I found that the baking time in the book was a little long for these - mine were done quite a bit early. I stuck mine in the freezer and had completely forgotten they were in there until I just saw yours :)

Gorgeous pics Jaime! Your bars look perfect. I had the exact same issues with the crust and I even buttered my foil before fitting it on the crust and topping with the pie weights. Frustrating! They were delicious, though, so I've already forgotten how finicky the crust was :)

Delish!! I have made this carrot cake three times now and I agree, it is definately in my opinion the best carrot cake ever!! I made it last week for my daughter's preschool and they all loved it so much that I had to print out the recipe for them. Thank you so much x
