Sweet Potato Biscuits (TWD)


This week's Tuesdays with Dorie (TWD) recipe was chosen by Erin of Prudence Pennywise: Sweet Potato Biscuits. I love biscuits but have never seen anything like this, so I was eager to try this recipe.

I've never had any problems with making biscuits. The key is to use really cold butter and to not overwork your dough. When cutting the biscuits you also need to make sure you press straight down, as twisting the cutters can inhibit some of the rise in the biscuits.


This recipe presented a lot of problems for me though. Even though I used 29 ounces of canned sweet potatoes (instead of 30 ounces), my dough was super sticky and moist. Not sure where the extra moisture came from? It was so hard to work with; I had a lot of trouble cutting my dough into biscuits. Then after they went in the oven, they hardly rose at all. I know my baking powder isn't too old, so that wasn't the issue. I am not sure what went wrong, but my biscuits look pretty pathetic.

Thankfully, aesthetics aside, these tasted great :) I enjoyed them with some butter and brown sugar. These would be great to make the morning after Thanksgiving, when you want something besides leftovers but don't want to spend too much time in the kitchen.

    i think you did a great job. mine was really moist and sticky too. whew. at least it wasn't just me :)

  3. I made these a week or so ago and mine didn't rise either, so I'm sorta relieved to hear yours didn't either. Of course I tend to have issues with this, so don't take my word for it! I really liked the flavor too.

  5. troublemakers, eh? i've never had potato bread, much less sweet potato bread. i have had cake, though, and i liked that just fine. i think they look quite tasty. they'd look even better slathered with apple butter. :)

  7. Ooh, you know what would taste really good? Using leftover sweet potato casserole--the kind with brown sugar, nuts and/or marshmallows! Now THERE'S a biscuit!

  10. Interesting! I didn't know that about twisting the biscuit cutters. I used a 29 ounce can too - it wasn't too sticky but I didn't get the rise i hoped for. still yummy though!

  14. I alwys struggle with sp biscuits. They are always a little sticky, but im too scared to over flour. I'll give these a shot and see what happens

  20. Wow, yours look great!! If you hadn't said you had problems, I never would have guessed you had a lick of trouble.

    My mom always gives her biscuits a little roll between her hands, and she says that makes them rise better. Everyone else says differently, but I swear hers are good and tall.

  23. Your biscuits look great! I made them, but didn't get a chance to post as I was in San Francisco this past week. Personally, I think there was too much sweet potato to deal with, that the dough was too heavy and moist to rise as biscuits should. They were very tasty, however.
