Great Grains Muffins (TWD)


This week's Tuesdays with Dorie (TWD) recipe was chosen by Christine of Happy Tummy: Great Grains Muffins.  Made with regular all-purpose flour, whole wheat flour, oats, and cornmeal, this healthy muffin is studded with dried fruit and nuts.  I omitted the nuts and included prunes at Dorie's suggestion.

I considered swapping out the regular sugar for brown sugar and then somehow got distracted with the little one running around my feet and ended up forgetting the sugar altogether! I was worried they would turn out awful, but between the maple syrup in the recipe and the bites of sweetness provided by the prunes, the sugar wasn't really missed in this recipe! I think these would also be really good with some figs.

  2. Haha, glad they still turned out well without the sugar! Maybe next time I'll just go with maple syrup and chocolate chips and see how that works. Then I can feel even better about eating these for breakfast :)

  4. I added dried cranberries and mine clustered together in the actual muffins. I loved the maple syrup in these.

  7. Gasp--you forgot the sugar and they turned out OK? Wow--I'm going to have to try that! Oh, and figs WOULD be amazing. I love how this recipe is pretty adaptable. Thanks so much for baking with me this week!

  8. I forgot the sugar one time when I was baking a chocolate cake(2cups) it was the prettiest cake I have ever baked but it tasted horrible!!! I was thinking these muffins needed more sugar..I guess I have a dang strong sweet tooth! Your muffins look so good! I really like this recipe so nice to tweek it any way you want!
